SAMPLING SUGGESTIONS

Ewe's milk cheeses are generally flavoursome cheeses, so they go well with wines with lots of personality. I would give my first choice to dry or syrupy white wines.

Young 3-4 month cheeses : the "gunflint" whites are very pleasant : Sancerre, Pouilly fumé, Condrieux.

More mature, 5-7 months : try a Jurançon or even a chilled white 10-year old Banyuls.

If you are a gourmet, enjoy the Lavort as a dessert with dark fir or chestnut flower honey.

Among friends, it is at moments like these that the Land of the Gods (Terre-Dieu) seems really close.
