Ewe's
milk cheeses are generally flavoursome cheeses, so they go well with
wines with lots of personality. I would give my first choice to dry
or syrupy white wines.
Young
3-4 month cheeses : the "gunflint" whites are very pleasant :
Sancerre, Pouilly fumé, Condrieux.
More
mature, 5-7 months : try a Jurançon or even a chilled white 10-year
old Banyuls.
